Summer is the perfect season for a fresh, light salad. You can prepare this salad with any vegetables you have on hand. The key is to focus on eating several different colors of fruits and vegetables.
The pigment indicates the vitamins, minerals, and other nutrients that the fruit or vegetable supplies. For example, red/pink veggies like red bell peppers and cherry tomatoes are rich in lycopene and anthocyanins, which are believed to delay cellular decay and promote cardiovascular health. Orange and yellow vegetables like carrots and yellow bell peppers contain cancer-fighters like alpha and beta carotene.

What You Need
10 oz. baby spinach
1 red bell pepper
1 yellow bell pepper
1 pt. strawberries
3 Tbsp. sunflower seeds
4 oz. feta cheese
What to Do
- Rinse and prepare your ingredients. Peel and slice cucumbers. Chop bell peppers into one-inch slices. Hull and halve strawberries. Chop carrots.
- Toss your fruits and vegetables into a salad bowl with sunflower seeds and feta.
- Serve with your favorite dressing. Add grilled chicken breast or a tuna steak to get your protein in there, too!
