Cold weather? Cold symptoms? Warm yourself up with this easy-to-make matzo ball chicken soup.
It turns out chicken soup may be more than just a folk remedy. In 2007, the New York Times reported that “a handful of scientific studies show that chicken soup really could have medicinal value.” And ABC News has reported that “Chicken Soup Really Is Good for a Cold.”
No cold? No problem. You’re going to love this soup even if you’re fit as a fiddle.
What You Need
- 1 packet of matzo ball mix
- 2 boneless skinless chicken breasts
- 1 tablespoon olive oil
- 1 1/2 cups chopped carrots
- 4 celery stalks
- 1/2 diced yellow onion
- 8-12 cups of chicken broth
- Parsley and/or dill for garnish
What To Do
- Make the matzo balls by following the directions on the packet.
- Heat the olive oil in a soup pot over medium heat.
- Sear the chicken in the pot for about 5 minutes per side until completely cooked.
- Remove the chicken and reduce heat to low.
- Cut the chicken into bite-size pieces and return it to the pot.
- Add the vegetables and broth into the pot.
- Simmer for 45 to 60 minutes on low heat.
- Add the matzo balls about 15 minutes before serving.
- Garnish with parsley and/or dill.
